Sweet cream buttermilk is the product resulting from the removal of water from liquid buttermilk derived from the churning of sweet cream butter. This product is excellent in place of fluid buttermilk.
Milk permeate is made from fresh pasteurized skim milk. Milk permeate is obtained by ultra filtration of the pasteurized milk. Milk permeate can be used in the following applications: bakery and confectionery, dairy based blends, cultured dairy products, standardization of dairy blends and as a replacement for maltodextrin as a filler in nutrition products.
